‍

Son of Man, Ella McCallion, Co-founder

Son of Man is a different kind of cidery. We make Natural Cider. We harvest and press Oregon grown cider apples once a year during the fall harvest. These apples contain a rainbow of flavors, aromas, acid and tannin – so we never need to add gimmicky adjuncts. This artisanal process takes months instead of days. The typical American cidery is more industrial factory than farm. They use extremely cheap juice concentrate made from old grocery store eating apples, blend it with cloying amounts of added sugar, artificial flavors and loads of malic acid to

pump out tankers of alco-soda. Son of Man takes inspiration from the centuries-old Basque tradition of making pure, complex and food friendly cider. We invite you to do as the Basques do and drink well, eat well and do the long pour.
